Walnut is a sweet dry fruit covered by a hard shell and a green layer outer shell which is automatically removed after ripening process walnut grows on a tree in cold areas where temperature is low. It is a very famous dry fruit and it is widely used in sweet dishes, there are two kinds of walnuts in the world English or Persian walnut and Black walnut all walnuts can be eaten on their own (raw, toasted or pickled) or as part of a mix such as muesli, or as an ingredient of a dish. Walnut oil is also a very famous ingredient and it is easily available in market which is mainly used for salad dressing, walnut is main ingredient in Iranian dishes like Fesenjan. It is highly nutrient dry fruit it is full of protein which is helpful for human body and brain, while black walnut is very useful for cancer patients because it kills “parasite” which is responsible for cancer.

The production of walnuts increasing every year and the largest production of walnuts is coming from Asia because China is the largest producer of walnuts in the world; a report said that world is producing about 3 million metric tons of walnuts every year.
